Blueberry cakes

So, with the weekend here, I got on with my baking.  I used a normal cake recipe, enough for 12 little cakes and added the blueberries as the final ingredient.
They looked lovely in their raw state...
 ...and even lovelier once cooked.
The blueberries are much juicier after cooking and have just a touch of tartness, which contrasts well with the sweet cake.
Of course, I needed to test one, just to make sure they were up to standard before offering them to Chris.  The verdict?  Yum, yum, yum!  Thank you to my little blueberry bush.

Thank you for your comment. They are scrummy - especially when teamed with a cup of tea!

  2. These look delicious, very simple and sweet. Yum. I often make blueberry muffins but have never tried cooking them in a cake like this, I shall have to give it a go.

Thank you for your comment. I thought about making muffins, but as I haven't made that many before and am not overly confident about my muffin-making skills, I took the easy option and made the cakes. Definitely worth a try if you haven't made any like this before. Let me know how you get on.

  3. These look delightful Ellie! Must try with the few blueberries off my own bush, the ones that the greedy pigeons haven't pilfered that is! E x

    1. Dear E
Thank you for your comment. The blueberry cakes are very successful but are gone far too quickly, in a couple of mouthfuls!
So far, my solitary blueberry hasn't had any pesky pests taking the fruit, so I have been lucky.
If you do managed to make some cakes, I am sure you will enjoy them.
      Best wishes
