Chocolate treats

For a birthday treat last month, I baked a yummy chocolate cake.  It is my usual go to chocolate cake recipe which always makes a moist cake that keeps well (not that it has much chance to!).  I decided to break with tradition and have a Cadbury's Flake on the top, rather than Chocolate Buttons.  It was delicious and didn't last long!

I follow Rebecca at Railway Cottage on Youtube and she has been trying a WWII diet.  She provided a recipe for Crumb Fudge which uses dry breadcrumbs mixed with margarine, cocoa powder, sugar and golden syrup.  This mix was one Mum always used with Cornflakes to make us Cornflake cakes for parties.  I think I may have had too many breadcrumbs as the base is a bit dry, not soft and squidgy as it should be.  I had some left over chocolate so topped the 'fudge' with it.  It is a recipe I will try again (great use for left over bread) but with fewer breadcrumbs this time!

It does taste good, but best eaten accompanied by a cup of tea!

  1. Gosh Ellie - both your chocolate cake & your fudge look so delicious. They are making my mouth water. I think Mum may have made that fudge recipe too but she used Weetbix instead of cornflakes - do you have Weetbix over there? They are very popular here in New Zealand. I am thinking of making a chocolate cake for Easter with tiny choccy eggs on top. xx

    1. Thanks, Julie. We have 'Weetabix' over here or 'Shredded Wheat' which would both work instead of breadcrumbs or cornflakes. Ooh, yes a chocolate cake with little eggs on top would be lovely for Easter. I often make little fairy cakes with mini eggs on top.

  2. Yum, they both look so good. I don't think you can go wrong with a chocolate cake, there aren't many people who turn their nose up (speaking as someone who has and does lived/live with fussy eaters). I'd have a dollop of ice-cream on the side of mine.

  3. They look yum!
    I can remember cornflakes and chocolate 'buns' with mini eggs on top for easter, my boys whilst at primary made them as part of their DT classes, they were supposed to pop them in their lunch boxes and eat them at home - they (obviously) did not even make it out of the playground!

    1. Thanks, kjsutcliffe. Cornflake cake 'nests' were (and probably still are) a staple for a quick cooking activity. I have had the ones we had and also the ones made with chocolate and the cornflakes, which set solid. Both delicious! I will make the 'crumb fudge' again, just with fewer breadcrumbs and then it should be a bit squidgier!
